Nutty Chocolate Bark

Grant buys dark chocolate bars several times a week to suffice his sweet tooth.  I have a Huge box of Belgium chocolate for when I make Chocolate Ganache for French macarons and I started to think I should make him some chocolate bars!  I saw an episode on Barefoot Contessa where she made some and it looked super easy.  

here's what i did

3 c of Callebaut 60.3% couverture or bittersweet chocolate
1/2 c hazelnuts
1/2 c unsalted almonds
(you can use whatever nut or dried fruit combination you like-have fun)
dash of sea salt

Preheat oven 350 degrees.  Line a baking sheet with parchment paper and set aside.  Toast nuts in oven for 8 minutes to release all the natural oils.  Let cool and chop nuts.
Heat chocolate in microwave in 1 minute intervals until it melts completely.  Stir with spatula.  Smear chocolate on baking sheet evenly in a perfect square.  Add nuts and sprinkle with salt.  Wrap with plastic and refrigerate for 6-8 hours.  Remove and cut into squares.  Serve room Temperature.  Great gift -wrap in cellophane 

*Tip
Dip your knife in hot water before you cut the squares to help with clean lines.
