BohoEATS...Beautiful Blueberry Protein Muffins


***these muffins help me stay on track in the Mornings- So easy to grab them and go! i usually Double the formula and store the other half in the freezer for the next week!(pull out of freezer and pop in microwave for 25 seconds!) you feel like you are cheating but it's really about 130 calories for 2 !

Preheat oven to 375 degrees F. 
Line 12-cup muffin tin with liners and coat the inside of them with cooking spray

Ingredients: 


1 cups Gluten Free oat flour

1/3 cup vanilla protein powder, try this
3/4 cups Gluten Free rolled oats
1 teaspoon aluminum free baking powder
1/2 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon salt
1 heaping cup unsweetened organic cinnamon applesauce
1 teaspoon coconut oil
1/4 cup stevia brown sugar or Ideal brown sugar
1 large brown cage free organic egg, slightly beaten
1/2 cup unsweetened organic almond milk
1 1/4 cup organic blueberries or your preference of berry
1/2 cup chopped walnuts

For Streusel:
3 tablespoons Gluten Free oats
1/4 cup chopped walnuts
1 tablespoons whole wheat pastry flour
1 tablespoon smart butter butter, melted
1/4 teaspoon cinnamon
*OPTIONAL, picture shown without streusel
I have used Purely Elizabeth's Granola instead of Streusel and it was great

Instructions

In a large bowl combine flour, protein powder, oats, baking powder, baking soda, cinnamon and salt; set aside.

In a medium bowl combine applesauce, oil, brown sugar, egg, and almond milk. Add flour mixture and stir until combined. The batter will be slightly lumpy.  Gently fold in the walnuts and blueberries.  Fill muffin cup 3/4 full.

Bake muffins for 15-19 minutes. check center with toothpick to make sure it comes out clean.

To make the Streusel: In a small bowl combine oats, walnuts, flour, butter, and cinnamon.

Sprinkle 1 heaping teaspoon over each muffin.  store in refrigerator-there are no preservatives so they spoil fast.  Shelf life in Refrigerator~3 days.
